Now, let’s chat about the fantastic benefits of incorporating more gluten-free and dairy-free goodness into your life! ⬇️

Going dairy-free and gluten-free isn’t just a food trend; it can genuinely work wonders for women’s health. First and foremost, it’s a game-changer for managing inflammation, a common culprit in hormonal imbalances. Plus, it’s a fantastic option for those with sensitivities or allergies to dairy or gluten.

When it comes to hormone health, some people discover that bidding farewell to dairy can contribute to a better balance. And guess what? Gluten-free diets might be a secret weapon for those dealing with conditions like polycystic ovary syndrome (PCOS), where smart dietary choices can help manage symptoms.

But here’s the golden rule: Every body is unique, and what works for one might not be the magic ticket for another. Pay attention to your body, embrace the changes, and let it guide you on your path to hormonal harmony. 🌸✨

Ingredients

Before we get started on the preparation, let’s gather all the ingredients. Here’s what you will need:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb bulk Italian ground sausage (mild or spicy, as per your preference)
  • 1 teaspoon red pepper
  • 4 medium russet potatoes, peeled and cut into bite-size pieces
  • 4 cups low-sodium chicken broth
  • ½ cup heavy cream (or half & half) (for a Whole 30 version, use canned full fat coconut milk or coconut cream)
  • 1 bunch of kale, stems removed and leaves chopped (lacinato/dino or curly varieties work well, you’ll need about 2 cups)
  • Salt and pepper to taste
  • Grated Parmesan Cheese for garnish (omit for Whole 30 or Paleo)

Recipe

Now that we have all the ingredients, it’s time to create this delicious soup. Follow these steps:

  1. Cook onions and garlic in a large skillet until onions begin to brown. Add ground sausage and red pepper flakes (if using) and continue to cook until sausage becomes brown (about 5 mins).
  2. Add cooked sausage, potatoes, and chicken broth to the Instant Pot. Cook on High Pressure for 10 minutes.
  3. Once the cooking cycle is complete, remove the lid from the Instant Pot and stir in chopped kale. Allow kale to become softened (about 1-2 minutes) and add cream (or coconut milk/cream). Season with salt and pepper and serve.
